The middle black tier had to be re-baked, filled, covered and decorated the day before owing to fondant bulge gone wrong - but all ended well :-)

hahah hi five on the realisation1! I know what you mean! am slowly getting into being organised! and it's challenging working and doing this but when you love it, as we do, it's not that hard BUT is still challenging.

I agree regarding chocolate cake! My cupckaes taste so much better the next day. I'm also working full time so this happens after hours and I usually only get home at about 630-7 in the evening. thank goodness I dont have any kids just yet

I very rarely bake and freeze - as they were all chocolate I could bake a few days in advance and then I keep them all very well covered until I can decorate them - a tip I have learnt is that chocolate cake, like fruit cake, actually gets better the longer it stands, so it can do with a few days of resting - I usually bake on a wednesday for the weekend (am doing this as a hobby - my real job is from 7.20 - 4 every week day) - and I dont have helpers so have to be very organised and that surprised me - to reach the tender age of 54 and discover that I can actually be organised :-) lovvvvveeee it - live for my baking and decorating x

well done! 300 cupcakes is not an easy task on its own let alone with a 5 tiered cake! Did you bake everything at once? Or was it baked in stages and frozen a few days before? I'm to afraid to bake and freeze dfor fear of someone tasting that it's been in the freezer.

Hi there, and thanks Carlette - I used dowels in every layer and one central dowel - and the baking seemed to take forever but was really not too bad - I get going in a rythm and then it's all good :-)

well done!! 5 tiers is a big deal! how long did this take along with the cupcakes?? and I'm assuming you used dowels in every layer? Or was it one central dowel?

Thanks Mandy - not much sleep was had but of course I don't need to tell you - the adrenalin keeps pumping when you have such a job on your hands and you know you can't let the client down - so it's nose to the grindstone!  But there was still some subsidence in my fondant and I really dont know why!  I will just have to practice practice and practice :-)
