Bonnie /Sandra, You 2 are so funny. It's called a ruler and a very l o n g slender carving knife. The knife used to have "teeth" but my hubby ground them off a long time ago. It's what I smooth off my iced sheet cakes with.  I mark it off with the ruler, use the edge of the knife, It reaches all the way across both ways. Makes a nice line to follow. That's it ---more than you wanted to know I'm sure. :-)
