Cake Decorating Community - Cakes We Bake

I’m ready to give up on decorating. Had so much trouble with the fondant on this one. After a few choice words and a little break, managed to put it together. I really have to remember that I have trouble every time I use this particular brand of marshmallows. Not happy with the finish at all but at least I know it will taste good. The bottom tier is strawberry cake filled with cheesecake (an actual cheesecake which is Kevin’s favorite) and chocolate smbc. Top is banana, filled with milk chocolate ganache and smbc. Hopefully my godson will like it. So proud of him for going back to school while holding a full time job and doing renovations in his house.

hum i will have to try the chocolate mixed with fondant , to cover a test cake , just to see how it works for me !; ))

Re-reading your comment Goreti, why would you doubt the taste of your cakes? You are a good baker as well as a decorator. As Katy said, no one will remember any flaws in your design, but they sure will remember if it didn't taste good. There is a well known vegan restaurant in town where I buy cupcakes. She just opened a bakery just for her cupcakes, cookies etc. Pricey, $40/dozen. I bought 12 to take for Samanthas & her hubbys b-day dinner at her Mom-in-laws. Well they were AWFUL! ! Dry, tasteless, even the icing had no flavor. When they were baked in small batches at the restaurant, they were always moist & flavorful. But you had to go early, cause they went fast. I have never been one to make a "fuss", but I sent this owner a email telling her her product was awful, & at that price I wouldn't be back. Said as a hobby decorator, I would want to know if my cake hadn't tasted good. We will see what happens.

You know Goreti - at the end of the day, all people really care about with cake is how it tastes!  What's the point of having a masterpiece if it tastes like something the cat dragged in?

I have added modeling chocolate to chocolate fondant to make roses, & they tasted amazing. Don't know why I never thought to add white chocolate to my mmf!! :o)

I did add it on one that I did for a cake last year.  Can't remember who the cake was for.  The black fondant I did add milk chocolate.  It smelled and tasted delicious but to be honest black just grosses me out.  I won't eat or drink certain colors   I had a slice of the strawberry with the cheesecake filling and it was delicious.  I got lots of compliments on the flavors.  Some people actually had a piece of both.  One little boy declared the banana as the "best cake he ever ate" and went for a second piece.  Funny thing is everyone loved the cake.  Of course, I noticed every single flaw.

I suggested Goreti add white chocolate to her homemade mmf. This seems to be what a lot are doing now. :o)

Tx everyone.  June, I think you are right about the name brands.  I haven't had this much trouble with fondant since my daughter's birthday cake.  Since then I have been buying the store brand and also melted the MM on the stove top (bain Marie).  This time I bought a name brand and melted mm in microwave.  I was so ticked off.  Ripped in so many places and couldn't patch it up too well so you can really see it.  Didn't have enough fondant to pull it off & start over besides I use SMBC so it comes right off.  Oh well, if you don't look too closely it looks ok and I know it will taste good.  I really wanted to do an awesome job for him.  He was 2 when I got married and I used to babysit him while his mother worked second shift.  He was the sweetest little boy and turned into a wonderful young man.
