Thanks Dee. I like to make my topsy turvys by actually carving into the tops of the cakes so that each cake actually sits inside and level on the cake below it. It makes a beautiful effect. It also looks great when a wedding cake has a topper if you carve into the top and make a level circle with a high 1" thick edge around it so that the topper looks like it is being "cuddled" by cake from the front.
