This was a school project my grandson had to do 2 yrs ago. "The Incredible Edible Cell". He had to make either an animal cell or plant cell in either 3D or from something edible. Didn't have any money to go buy supplies so I dug thru my pantry and had all the ingredients to make fondant. This is what we came up with. Was a big hit w/his classmates & voted best tasting.

Have you tried Mexican Modelling Paste? It claims to go hard enough to hold it's shape, but stay soft enough to eat. I am about to test that theory today. I have used it on Mick's birthday cake. So far the firm to enough to hold it's shape is true (quite hard actually), and the soft enough bite will be tested this evening.

I made a gumpaste B & G for a friend's daughter as a surprise to go with her wedding cakes. Poor dear, she put it under glass, it got warm, and started to fall apart. She asked if I could fix it, alas, I could not. I told her it had to go to gumpaste heaven... hee hee
You can make figures totally from fondant, but they take a long, long time to dry. Any exposure to heat & moisture tho, is a killer. :o)
June, I do use the Wilton gum paste to make figures. They hold up much better than fondant. Problem is, although it's supposed to be edible, it dries very hard & has no taste whatsoever. I had read that pretty much all of the decorations on the cake should be edible & that's stuck in my head so I try to keep gum paste decorations to a minimum. On the plus side, if stored properly, can be saved as a memento of the occasion. I had suggested to the mommy-to-be that I made the zebra baby shower cake for that she could keep the cake topper under a glass dome as a decoration for the baby's room.
Thanks ladies :) Now if I could just do something more w/fondant than just cover a cake with it & 1 dimensional things such as this. I've tried making figures w/it and they haven't held up very well. Someone has asked me to do a "Rug Rats" bd cake so I'll probably have the opportunity to try again.
