I totally agree on the stamens covered in fondant.  I did that for my Gladiolus.

This is another piece from the class i took at July's World Pastry Forum.  Can you believe the stamens are covered in gumpaste!  Definately worth the extra effort.  They look 100X better then the paper ones they sell in the craft store and really wasn't that difficult to do.
