It really isn't hard. The icing I found us a little tricky. My daughter is vegetarian. But I new she appreciated the full vegan. We have an amazing vegan restaurant & bakery in town. Daughter replicated her icing. The base is organic palm shortening. None if the health food stores have it here. Not even Whole Foods. At least here in Canada you can only order it online.

Great Cake June!!! My hubby is a Super Vegan, so he would really appreciate it. I think I've made him an actual cake...ONCE.

Well Linda
No eggs, baking pwdr, or milk. Used rice flour & organic flour & sugar.
I usually use earth balance spread & shortening for icing, but used this coconut oil.
Won't do that again. Sam isn't 100% vegan, but does no dairy, zero red meat. Eats fish, some tofu, free range chicken & eggs. Limits her sugar & sweets. Uses mostly organic in baking.

awww, I love this! I didn't know your daughter ate vegan. How is this cake different than any other cake? No eggs?
