Hi Tiffany,

I'm not saying its the best one to use, but it's the one I use - Renshaw Professional Choice Regalice (TM) Celebration. I find it is easy to work with and doesn't dry too quickly, so makes smoothing and polishing a pretty quick job. I also find that it doesn't crack apart like some I've used. I think as long as you stick to the best you can get from a professional decorating supply shop then it should be fine. Some of the fondant sold in the supermarket has a tendancy to be sticky (certainly in the UK) and can be very difficult to work with. I've not used the brand you mentioned, so I'm afraid I couldn't give you a comparison :( Obviously I'm in the UK and you are in the States, so I'm probably not best placed to answer your question fairly. PS: for my modeling work I use Mexican Modeling Paste (or a 50/50 mix of Gumpaste and Fondant) It's much easier to work with than just fondant, allows more precise details, but it doesn't dry as quick as Gumpaste (our flowerpaste). I buy mine readymade by Squires Kitchen (an English company I believe).
