Cake Decorating Community - Cakes We Bake

My contribution for the dessert table for a family birthday party tomorrow. Unfortunately that meant hubby didn’t get a birthday cake today. This is chocolate cake filled cherries and mascarpone using a little of the mascarpone filling to crumb coat. Meringues were flavored with freeze dried strawberries since I couldn’t find cherries. Chocolate also has some freeze dried fruit.

I'm not a big fan but I have to admit these meringues are very tasty.  The orange zest paired with the strawberry is really yummy.  I may have eaten a few.  lol

I could look at this cake all day - and yearn for it!  And as for meringue - love, love them!  Just plain sandwiched together with whipped cream - HEAVEN.

So scrumy Goreti...My Mom made meringues all the time when I was growing up. Probably for the same reason...leftover whites...

haha Bonnie.  Meringues are a very popular in a Portuguese household.  Many dessert recipes call for egg yolks so they make meringues with the white.  Usually they just add lemon zest to them.  I like to change things up a bit.  Have made w/chocolate shavings, brown sugar, coconut etc.  Since I had some freeze dried fruit decided to go w/that.

Thanks everyone.  @Gail  this is how I did the chocolate http://www.frankie.com.au/blogs/food/frankie-fodder-raspberry-swirl...  The meringues are really delicious too.  I added orange zest as well as the chopped freeze dried fruit.
