Hi Dena! I have shown your gator cakes to so many people. Everytime carved cakes come up, somehow your cakes do too! I'll just say what Aggies say ... NO, not Gig 'em!! There are no ex-Texans and I'm glad to see you here!

Since I'm new at this... Can I cover a cake with cream cheese icing with fondant? Or is it too soft or moist or anything else? Do I just add a thinner layer of icing on top?

Yes, you can use a cream cheese icing, make it stiff or do as I do and mix in butter, too. Not too thick and let it harden in the fridge before covering with fondant.

Thank you! I'm doing a last minute cake request for a friend. She needs it for a family reunion of 50 or so tomorrow morning. I'm a little stressed. I'll have a busy night when I get home from work. Thanks for your help! Wish me luck.
