I posted this in the Cake buisness forum but i wanted to ask my neighbors what you all thought about this. There's a bakery that's offering me a job as decorator/baker-just cakes nothing else. And since I've never worked in a bakery or anything like that I was wondering what i should charge? By hour, by cake, etc?

Usually you would be paid by the hour.  Some businesses are busy and not, so getting paid by the hour would cover the times you are not decorating cakes.  You have to be fast and neat.

You should get an hourly rate that is on a level with your skills.  If it takes you 2 hours to just cut an Ice 1 cake much less than someone who can Cut & Ice 20 in an hour.  Can you do much fancy piping, how are your piped flowers, how organized are you?

I have always had a bench test to see my skill level to see if I was going to get the job and if so for how much money.  That is a 1-3 day test where either you have a list of items that you have to make, or you have to work with the Chef so that they can see how you work & take direction.

Just do not take minimum wage.

Alexander, thanks for the info hon, I truly appreciate it. Hey, you sell supplies, fondant, etc, right? I was speaking to the owner about you.

I am a Pastry Chef/Cake Designer and my wife Heidi is the owner of the company.  It is A & H Cake Design www.ahcakedesign.com and if you let us know what you need we can meet you locally or bring things to the meeting for you.

n/p about the advise, I have worked all over and have an idea of pay scales although FL is about 40% less that I would have gotten in Boston where I am from.

If you have any other questions you can always message me.

Hello everyone!! I'm wondering if any of you would be interested in doing just cakes/decorating at the bakery I was talking about previously. Unfortunately, the days they need me interfere big time with my autistic's son's schedule :-(   The owners and staff are super super nice people and very helpful.

Let me know if you're interested and email me privately.

Thanks!

Are any of my SWFLA neighbors going to the Fla ICED Competition?  As expensive as gas is, maybe a few of us can carpool and chip in, and make it more economical. Just a thought! :-)

Heidi was going to set up a booth but the cost to stock one is beyond us this year.  I would like to go regardless, but I will wear an A & H Cake Design Shirt.
