Hi Francis, when CMC or Tylose is added to fondant you get MODELLING PASTE not gum paste. Modelling paste is used for modelling animals and other items. Gum paste or flower paste is used for making flowers.

Hi hope everyone is in good health and still enjoy baking and decorarating.I need to know if i can use choclate mousse with buttercream.Please help me on this one.
I also use just beaten up ganache as a mousse - holds beautifully
