Hullo there, I am so happy to have found you all. I am Mandy Nel, live in a little town called Empangeni on the North Coast of KwaZulu-Natal, and discovered the absolute joy of cake decorating at the tender age of 51 when a daughter of a friend asked me to bake her wedding cake - a four tier topsy turvy creation covered in fondant nogal! I had no clue what fondant was, not to mention topsy turvy! But that gogga bit, good and solid! So am now happy to be in contact with fellow souf efrikan bakers who can help with tips on dealing with caking oopsies and suppliers in our fair and beautiful country! Speak to you all soon :-)

What is the SA version of Gumpaste? I struggle to figure out the difference between Fondant (or in SA's case: ready to roll/plastic icing) and then what exactly gumpaste is.

I was just as curious to find out the difference between fondant and gumpaste, so I found a recipe online and tried it.
So for me the difference is in the texture, gumpaste is almost spongey. It dries a lot faster than fondant and it makes stunning flowers. I have never heard of anybody covering a cake with gumpaste, probably cause it dries so quickly.
Gumpaste and fondant/plastic icing are deffianately not the same thing.

Hi, from what I could gather is that there are 2 variations on gumpaste. one is when you just add tylose powder to fondant/plastic icing and the best one I find is one made from egg whites. there are recipes all over for gumpaste but I find the one by Michelle designes or cakes by Michelle in Australia is the best, works for humid climates like here in Durban!
I also posted a question that I am having difficulty with and cant seem to find it now! I need to know which colours to mix to get the 'black tea' look for alcohol bottles. Anyone out there who can assist?
