Have you let them cool completely before trying to move them? The only time I've really had problems is when I've tried to pick up a cake before cooling. Are you refering to the whole cake, or after it has been cut into layers? When I am layering and filling a larger layer I slide a flatt cookie sheet between the cut layers to lift them off and slide it off of the pan when I am putting it back on.
I sometimes have trouble with cake layers larger than 12". The cookie sheet is a great idea. There is a product from Wilton that is smaller that a cookie sheet and very productive; it's called Wilton Cake Lifter. Not as large as a cookie sheet, therefore easier to handle. You can find them online.
try sliding a cake board under them (wrap it in tin foil to make the layers slide off easily, and so u can use it again) then for sure it wont break and its the easiest way ive found in 7 years.
