Cake Decorating Community - Cakes We Bake

Hi everyone!  I'm new to the group and have been decorating since May.

I tasted a cake that a friend of mine bought and it had the most INCREDIBLE buttercream frosting!  I have been trying to duplicate it, but with no luck.

It was super creamy, very shiny, thick and had some stiffness to it. Just melted in your mouth good.  I think she said it was a French buttercream, but not sure what makes it that way. Any ideas on the kind of recipe that was used?  Someone suggested corn syrup but that has not worked.

I guess my next step would be to ask the bakery for the recipe....but not sure they would share!

Thanks everyone and love the topics on te discussion board!

Happy baking!

Hi Kim! Check the "Forum" page under recipes someone may have posted it here. Or just check online. Good luck :).
You might try experimenting with an Italian buttercream or Swiss buttercream recipe.

Did it had butter in it?

I've seen some recipes for French Buttercream before - I'm going to look them up and see if I can find them.  I've heard French buttercream is delicious.

Above is the link to the Wilton version of it, but you can try other versions.  It is on my to do list to try this one though - I've heard it's heavenly :).  Good luck!

not sure if its the same buttercream, but sounds like swiss buttercream.  I know that there is italian buttercream, so maybe there is french buttercream.  Sorry, i'm pretty new to baking, only in this past year.  But i am so into swiss buttercream and i love it.  Its thick and shiny too and stays on your cake and doesn't melt into the cake.  i got the recipe from 'the crumb boss'.  Google her, she has a bakery in new jersey.  She has videos on you tube and has a blog and she replies to you too (also on facebook).  She's given me lots of gr8 advice. I  Do want to learn about italian buttercream too though.
Try this web-site http://www.pastrychefonline.com/French_Buttercream.html
French buttercream contains only egg yolks. All the best, I love it as a filling for cakes etc.
