Stick them in the fridge then work fast. Thats what I can only think of

Make a ball of gumpaste on a toothpick & let it dry/harden or stick a toothpick into a gumball. cover the ball with your modeling chocolate and set in a piece of foam. handle as little as possible and sculpt mostly with your tools. 30-60 seconds in the freezer (no more or you can get stickiness from condensation) to firm up is helpful. Also, if you have that canned air you use for blowing the dust out of keybords, you can turn it upside down and give the head a quick blast. if you are releasing a lot of oil from your modeling chocolate, dust lightly with corn starch.

thank you! do you have a good recipe for gumpaste? I don't know how to do gumpaste yet.
