I buy both purpose made cake dummys as well as styrofoam I can cut to shape. The secret with using styrofoam is once you have cut your shape and are happy with it SAND IT SMOOTH. I often cut cake dummys in half to make spacers or wedges and no matter how careful you are it still has that knobby texture after you cut it. Sanding it gives a better finish.
I've also found some cake dummys have imperfections on their sides where they have started and finished the cut. This can show up when you try to smooth your fondant over the sides - once again sand it smooth before you cover it. Same with the top of your dummy.
I've also recently discovered a beaut tool for 'cutting' styrofoam. It's called a hot blade. hot knife or hot wire. Basically it's a hot filament that will cut through styrofoam like a hot knife through butter WITHOUT ALL THE MESS!! There is no little bits of foam sticking to everything - especially to the cat coz cats hate static electicity even more so if it attracts bits of styrofoam LOL. It will cut any shape easily. I am in love with this tool at the moment!
