My husband is a diabetic so my recipe is sugar free but I'm sure it can be made with sugar. I use 1 package of sugar free cook to serve vanilla pudding and pie filling using heavy cream instead of milk and cooking until it is thick not just coming to a boil, chill, this makes a very thick pudding. Then make whipped cream using 1 cup of heavy cream. I sweeten to taste with splenda and add 2 tsp of vanilla bean crush and stabalize with either whip-it or unflavored geletine. Fold the whipped cream and chilled pudding together. I've gotten lots of raves about this filling and although its full of fat its sugar free.
I will be happy to post when I get a chance - 4 cakes and 120 cupcakes to get ready for pickup on Thursday so I'm bit buried at the moment!
