Cake Decorating Community - Cakes We Bake

I have an order for 3 doz cupcakes due for Sunday. On weekends we usually go camping, so I'm not home to do my baking. I was wondering if I could bake them ahead of time, and then freeze them until Sunday when I'd need to decorate them (they'll be delivered on Sunday to be eaten on Monday). Would freezing then thawing affect the paper liners? I certainly don't want to have soggy cupcakes! Anything I can do ahead of time always makes things easier for me. As it is now I still have to color all the fondant letters I cut out to spell the team name (the cupcakes are for a soccer team) so if I could get the baking out of the way now it would leave me more time to do the painting.

I do it all the time with no ill effects, in fact, a lot of people think freezing for a little while helps make the cake moister! And so far I have not had any trouble with the papers being soggy. I take the cupcakes out right at the time I am ready to ice them and ice them while they are still frozen. They are so much easier to handle when they are still frozen. Then embellish. I am sure someone will have an opposite opinion, but this has always worked for me, and I do A LOT of cupcake orders! (I must admit I even have on occasion gone ahead and iced and frozen, then allowed the cuppies to "thaw" before adding the embellishments. That is not the perfect solution, but sometimes you have to have a life!) Keep us posted on what you come up with.
Thank you Marta!!! I always freeze the cakes I make, but I don't usually get cupcake orders, so the issue with the paper liners confused me. (which some days doesn't take much! LOL) I'll start baking tonight! Thanks again!!
