I use store bought fondant, and have always got the Dr Oetker White Icing, and then colour it myself (getting an airbrush for b'day to help with this)! However it always seems to be really sticky. I use trex or icing sugar and still seem to be having a problem with it. When I ice a simple round or square cake it is stretching and splitting, and I was wondering if there is anyway to rectify this problem. I swear I never used to have this problem, so I don't know what's up!!

Any help will be greatly appreciated.

Hi Lucie personally I don't find the dr oetker icing the best one to use its extremely soft to start with, have you tried a different make? I normally use one of the more professional brands (if you don't have a sugarcraft shop near you try ordering off the net. Renshaw or regalice are both pretty good) and always roll your icing out on cornflour rather than icing sugar. I'm guessing that your using your airbrush to add detail etc but if your colouring the whole cake using a gel colour and adding it to the icing and kneeling well will solve your problems I think .

Lucie - I also find Dr. Oetker gets a bit sticky when you add colour to it, especially if it's a dark colour that requires quite a lot of gel.  I often use regalice as Les says and find that it a bit drier, but needs lots of kneading to soften it up for rolling.  I am also totally with Les on rolling out on cornflour rather than icing sugar.  When the icing sugar picks up moisture from the fondant it tends to get sticky.  Cornflour doesn't do that.

Thank you so much for your replies. I have a couple of boxes of the icing to use up before I  can order some more, when I have had the renshaws before I didn't really like the flavour, maybe it was just me ;) .

Definitely will try the cornflour thing though, I have seen a lot of people using this for other things that I would normally use Icing sugar for, and because it can get quite hot in the kitchen, it would make sense that the fondant is getting sticky! Sorry only just getting back to let you know how I got on, been one of those bad beginnings of the year!

I have now tried a few different icings, and instead of using icing sugar used cornflour, and oh my, what a difference. It is still not good with the Dr Oetker so I am palming these off on different people who are perhaps not as picky! But with all the others I have tried it has worked a dream, easier to roll, lay on the cake and smooth out. Who would have thought something so small!!
