I had come across MMF before but can anyone tell me if they use it in the UK.

I make my own sugar paste from icing sugar, liquid glucose and egg white and have done so for the last 22 years, I think this recipe is from Australia.

Someone once told me it tastes like white fudge and I think this sums it up nicely

Please tell me what you use?

I've never used it and I'm very interested to see what its like, maybe post it on the discussions forum, I think americans tend to experiment more than us conservative British! he he!
Hi Rachel, There's alot of things in here I've never heard of, "buttercream fondant" whats that?????? I am a fully qualified pastry chef to the level of advanced pastry and trained traditionally, it's really hard to get my head around alot of things.......ie cake mixes, they seem to be used alot.
What do you use to cover cakes?

I haven't tried MMF yet but am thinking of giving it a go - just want to wait until I'm not doing anything too important first, in case I don't get on with it. Will let you know how it compares!

I usually just use shop-bought sugarpaste because most of my books say it's not worthwhile making your own but white fudge sounds yummy! Do you mind sharing the recipe?

Sugar Paste
1 egg white
2 tablespoons liquid glucose
675gr icing sugar
Put all the ingredients in a mixing bowl and with the paddle attatchment mix on the slowest speed for at least 5 mins, Roll out with cornflour. it is a little more unforgiving than the bought stuff.
You can store it in a bag but once it's on the cake it will dry out so icing a traditional cake a few weeks before is not advised unless you can get it in a tupperware.
After storing it, it soon goes into a relaxed state so you will have to mix it again in the mixer to bring it back to a soft rollable paste.

Just thought I'd mention that I use regalice for my figures, it's far easier to mould with.

Okay, I've totally missed something here, what is MMF?
MarshMallow Fondant - it's a simple fondant made from melting marshmallows and adding icing sugar. It's cheap and easy to make and it's supposed to taste better than standard fondant :o)
