I always use buttercream to top cup cakes with... so can anybody recommend something different to use??

How about using fondant, cream cheese, or even chocolate?

You can always change the application of buttercream to change how they look.  Piping with a petal nozzle, applying with a spatula, instead of a large star swirl nozzle.

 

Ive never used the cream cheese?? someone told me that it only goes with carrot cake... maybe i should give it a go. x



It's lovely on red velvet cupcakes. strawberry cupcakes, chocolate or just vanilla cupcakes, with vanilla flavoured cream cheese frosting.  I've even seen a coconut cupcake, with coconut cream cheese frosting.  Just google search, or go on a site like Allrecipes.com for more ideas.
The downside is that this frosting needs to be kept chilled.

have you tried Italian Meringue Buttercream, its not so sickly sweet as buttercream (a bit like vanilla ice cream), you can flavour it with lots of other things ie limoncello or a fruit puree. It is lovely to pipe with. There is a great you tube video by cake love showing how to make it. Lots of people post about it splitting but if you leave your mixer on and walk away it always works in the end (I threw a batch away once because of this).
