CWB Project # 6 - Easter Pound Cakes!

Here is a recipe I got from a friend of mine which I want to try out:-

Butter: 250 gms
Sugar : 250 gms (you can add half brown & half white I would use only brown for the rich color).
flour : 250 gms
eggs : 250 gms
fruits : 500 gms ( raisins, candied ginger, orange peel, dates)
Cashew: 150 gms
Spices: 1/2 tsp each of nutmeg, cloves & cinnamon
Baking powder - 2 tsp
Vanilla : 2 tsp
caramalized sugar - 3 tbsp (this is mainly to get the dark brown color)
Mix butter & sugar well, then add vanilla & egg yolks one at a time.
add the flour with baking powder & spices ( I like to sift the flour with the baking powder & spice). Beat egg whites till fluffy and fold it into the flour mixture. Keep the mixture aside for half an hour before baking.

I would add about 3 tbsp of either brandy or dark rum. I never use my mixer for fruit cake, I mix the old fashion way with a wooden spoon. (good exercise for your arm he he he!!!!!!!)

Happy New Year everyone!  How about doing something nice and light? I'm sure everyone is all tired of the heavy holiday sweets! Just throwing an idea out there...

Should we do something related to Valentines Day???  I usually do some sugar cookies for Valentines day.... Since January is already half way over maybe we should start looking at Feb???  I have not done anything lately but will be working on grandson's b'day cake in a coulple weeks then the Vtines day cookies.

I am fine with what every you guys want to do.  But I really think we should do the same thing.  The last few times we all did different things.   What would you guys like to do.  Cookies, cake, cupcakes, chocolate?????

How about a pink velvet cake? Perfect for valentines! I also have a good recipe for pina Colada cupcakes, sticky toffee pudding, coffee crumb cake...I also have been experimenting with some vegan cakes too- the one I like is the snickerdoodle vegan cupcakes. Just throwing some ideas out there!

Okay... Faith do you mind taking the lead on this, with the Pink Velvet Cake?  I have only made Red Velvet and used the Cake mix from Duncan Hines.  This sounds great, Valentines and Pink Velvet Cake...... I have 6 cakes to do in the next month so I am going to be busy, but plan to do a little something for Valentines day.
