Good Luck Jeri!!! Well if you have everything done by then, you can just rest up after your surgery and kind of enjoy your holidays.... I can't wait to see the finished Gingerbread Houses.... I still have one in my freezer my daughter made a few years ago.

Jeri I hope your surgery goes great and you are up and around very soon my friend! I have to start on my gingerbread house this coming week...our contest deadline is Nov 14th. The whirlwind of the holidays begins!

Here is a good recipe for structural gingerbread...the stuff you make the houses out of....this is enough for one house

GINGERBREAD HOUSE RECIPE

Cream together:
1 Cup Crisco
1Cup Sugar
1 Cup Molasses
Add 2 Eggs
Stir in after sifting:
5 Cups All Purpose Flour
2 Tsp. Cloves
2 Tsp. Ginger
2Tsp. Cinnamon
Chill dough at least 1 hour. Roll out ¼” thick or less on floured
waxed paper. (Can use parchment and bake right on the
parchment).
Cut dough to size of pattern and flip onto ungreased baking sheets.
Bake in preheated oven at 300 degrees for approximately 30 minutes.
A crisper cookie makes a better house.
Cool completely and store in air tight containers

Even though its only November, I have Christmas on my mind! I bought my Christmas tree this weekend and I'm already starting to fix it up :). Here in the islands, fruit cakes are a must - but they are very different than the American style of fruit cakes...they are similar to the English style Christmas Pudding - and are so dark and delicious with hints of rum or brandy! I've got my fruit "soaking" in brandy and wine and I'm trying out a new recipe from Teneisha Williams (she posted it under the recipe section)...so for those who may be interested in giving the old Fruit Cake a try, I highly recommend doing it island style! I'll also be doing some sugar cookies (using Jeri C's awesome sugar cookie recipe) later this month so I'll be sure to share those pics too.

Also, just wanted to share, I made a low carb cheese cake, it really came out well.... Splenda with cream cheese, sour cream and an almond crust... Delicious!!!

Thanks all for the good luck with the knee surgery... I am not looking forward to it at all. Am looking forward to being able to walk better without the hobble but I need both of them done they are bone on bone and very painful. I just had back surgery in June so another surgery so close is not my idea of a great time! Will be doing one of them Dec. 9th and the other later on after the first one heals.

I will be starting on my gingerbread this weekend so it has time to set up before putting the houses together. The kids are looking forward to coming home for the great gingerbread contest! They are between the ages of 25 and 32 and you would think they were 5 and 6 the way they get excited for this event!!! Am going to make a special one for our grandson who is almost 2 so he has his "own" house to decorate too!

I just love seeing all the ideas on here... and from all over the world! Faith... I must say my aunt used to make fruit cakes every year and it was always the brunt end of everyone's jokes... to this day I can not even think of eating fruit cake after hers... maybe some day!

I will be baking my fruit cake as soon as all the fruits are chopped up. In my house christmas is not complete with a fruit cake.

Anne M and Faith I hope you share your fruit cakes with us... I would love to make a really good fruit cake, that is not like the ones in the tin you buy at the store. I know a bakery around this area makes one and puts a whipped icing on it. Thanks again.

The recipe I'm using this year is from Teneisha Williams' recipe (its posted under recipes on this site)...I made some of my own substitutions...I used blackcurrant juice and blackcurrant jam in the fruits, and I used brandy instead of rum. Just a personal preference. Teneisha uses pineapple juice, strawberry jam and white rum. I have my fruits soaking now, and will be baking my first batch after Thanksgiving :). I'll let you guys know how it comes out!
