Hi Christina, most of the time I do my cakes from scratch. I'm so used to doing them now that it doesn't take very long for the batter to come together (although not as fast as a box mix)...sometimes I do use doctored cake mixes - depending on the flavour and the price range for the client. Hands down, my favourite cake mix to use is Duncan Hines for sure! To me Betty Crocker has a sickly sweet taste, whereas Duncan Hines to me, gives a better "homemade taste". My two favourite ways of doctoring the cake mixes is the WASC recipe for the white cake mix, and using the golden butter recipe (for this I use one stick of butter, 4 eggs, 2 tsp vanilla and 1 cup of milk).

Thanks Faith! I'm not nearly as talented as some of the talents we have here in Cayman but it sure feels good to be a part of such an elite group of enthusiastic bakers and decorators! Christina suggested the site to me too, and now I'm an addict LOL. I created this group though, because I felt it would be good for us to have forum with fellow island bakers...it's not always easy but I LOVE baking and cake decorating, so for me the rewards are always sweet! Feel free to jump right into the discussions, or start your own - this group is truly a group of real islanders - who are always friendly and willing to share experiences, recipes, advice and even support when you're having that rough caking day! Smiles!
