Hi Everyone!! New to the group and just wanted to say hi. Did you know there is a cake show in AZ? It's in February of each year for the past ... oh 5 years I think. I help to plan it and everything. you guys will have to try and come. You can enter your cakes and there is demo's and the last two years even a live competition. Fun stuff!

@Christina Marana. I have taken the Wilton classes. Well. I'm on course #2. What's wrong with your smoothing?

I have taken the Wilton classes although I don't remember how they teach it or if I do it that way. lol Make sure you are adding plenty of buttercream. You can take off more later but you need to have a lot. I smooth as much as I can with an offset spatula removing excess. I then use hot water on the spatula. I did that for a long time but now I have a spray bottle. I spritz it all over and then smooth. HTH

when you smooth the sides with the spatula, pull towards the top as you take excess buttercream off. The hot water and spatula that both Barb and Bonnie talk about is the best advice. Especially if the spatula is large/long enough so you don't have to make multiple passes to smooth the whole thing.

Another thing, you can move the extra buttercream that doesn't want to flatten out to an area where you will be placing decorations.

Howdy all! Just joined, looking forward to making birthday cake here in a couple of weeks. Haven't ever made anything bigger than a 10 inch round, and I'm going for a 3 tier! Scared but happy. I look forward to talking with you all, but I really have no experience yet. I'm probably silly for wanting to take this on, but whatever.

Hello all: just joined and I'm happy to connect with other cake enthusiasts in AZ. I have taken the Wilton courses but I don't decorate as often as I would like to and I decorate just for fun and family. I introduced my daughter to the Wilton classes and she loved them as well. We decided to take the new revised classes (bonding time) and we took the Basic and the Flowers classes. still pending to take the new fondant class. Love this website!
