can you use whipped cream as a filling for fondant cakes? has anyone done this?

Yes I have but because the cream does need refrigeration (to keep fresh) it causes all sorts of condensation problems with the fondant. Also find it needs to be eaten within a day or 2 as cream does not keep very long. Also be careful with the amount of cream used as the filling - when putting the fondant on if too much pressure is applied the cream will bulge out the sides.
