It depends on what I am doing. For general work I will use the Ateco or PME tips but if I have to do stringwork or very fine detail work I will use Bekenal. The PME & Bekenal are expensive but I think they are worth the money. I just do not like the seam in the Wilton as they have a tendency to curl when you are piping straight lines.
Diana everyone starts out being terrible with writing...make up some practice buttercream or royal icing...the ingredients arent expensive and cover the back of a sheetpan with plastic wrap. Doodle to your heart's content. When you are done scrape up the buttercream and reuse it. You cant do that with royal icing but it is good to practice with both. If you dont know how to make parchement cones cut a disposable decorating bag almost in half to shorten it. Bunny is right about too much icing...love the pacman tip name btw :D

Jaci when you scoop your icing into the bag and before you close it, shake it a few times to get the icing down into the tip, then twist..much less burping :D

Someone mentioned having a steady hand when piping... that's certainly not me! LOL! I think that is why I'm not overly excited about doing buttercream/piping work. Especially when it comes to writing the message on the cake! I think I need the most practice with that.
That is a good idea to make up some cheap buttercream and make some designs on it that you want to practice. Put a piece of Parchment paper over it & pipe your designs. You can even do letters and phrases so you can get better at writing Happy Birthday. If you want you can do this with chocolate too so you can pipe chocolate on cakes.
