If I have so much cake that I have to freeze them I thaw them in just the plastic and then take them out of the plastic to air dry for a couple of hours before I ice them...but my cakes are very moist anyway...so drying the crust doesn't dry them out. If you don't do that they will be soggy ...anytime you leave cake in plastic it will be soggy. Some people think that is moist...but moist and soggy are not the same thing. I wrap mine the same way....plastic and foil. I don't know how long it takes them to thaw completely. Seems like it isn't that long though. I would think that if you take them out a couple of hours ahead...by the time you finish decorating them they will be completely thawed...unless you are super speedy. we bake on Tuesday and Wednesday...make flowers and such those days too. Ice on Thursday, Decorate on Friday and deliver on Saturday (at least that is always the plan! ) If we take the cakes out of the freezer on Thursday morning early they are ready by the time we have boards, fillings and icing ready to start putting them together. no, my cake is not very big...but i have 4 of them...by saturday, and i just do this in the evening after work. so i was thinking if i freeze them it may save time. so you take off the foil and let them thaw in the plastic for a bit? i've also heard thawing them in the fridge helps (still in plastic) i even thought about putting it undecorated in the fridge wrapped...never done that....
