Cake Decorating Community - Cakes We Bake

I know someone has posted this elsewhere, but I can't find it.  There is a technique for creating tall cupcakes  - you either put them into a hot oven then turn it down, or into a slow oven and turn it up - but I don't know which it is! My cupcakes, no matter what recipe I seem to use, always come out flat on the top.  If there's too much batter they just spread.  I'd really like my cuppies to have a nice little dome at the top.

Beautiful swirl on those cupcakes!
I have found that if I bake them at 350 for 16 minutes they dome... if I bake them at 325 for 22 minutes they are flat....
I always do the dome because I like the rounded top. If I am doing a fondant decoration on top, I want them flat. I usually just swirl the buttercream on them.
im not an expert but my mother always had said.."dont open the oven too many times, or they wont come out fluffy." maybe that can be something u can do. another thing can be the way you mix the mixtures, dry with dry wet with wet, first wet then dry, as in eggs oil water first then slowly work the flour in..
I like flat cupcakes, too.  In fact, when they come out of the oven with a dome, I place a cutting board on top and smoosh them flat.
There are actually "Tall" cupcakes on the Whimsical Bakehouse's site...
