I know someone has posted this elsewhere, but I can't find it. There is a technique for creating tall cupcakes - you either put them into a hot oven then turn it down, or into a slow oven and turn it up - but I don't know which it is! My cupcakes, no matter what recipe I seem to use, always come out flat on the top. If there's too much batter they just spread. I'd really like my cuppies to have a nice little dome at the top.

I think the term Tall cupcakes is a way of stacking two cupcakes on top of each other and decorating them as one.
I reallly think it is the size of the cup in your cupcake pan that determines the size and shape. I have very old pans and the cup is not like the newer ones they put out now, and those come out crazy, I put to much in them one time and I had muffin tops on those. But when I used a new pan, they came out perfect with a little dome on top, the ones with not enough batter were flatter.

I think this tutorial HERE willbe of great help...I did it and got that really nice dome to the cupcakes..I am no baker or scientist but the heat in the milk helps the levening agents to rise more while baking..but have a look at the tutorial and it should help!

Yesterday I went to the the website that Sweet Art Cakes suggested for the tutorial on cupcakes... Learned a thing or two.... and look what I did, an awesome swirl, my other cupcakes were flat, not anymore!!! Thanks so much for directing us to that site... I am loving my mad swirl skills from last night, I hope I can duplicate it on all the cupcakes I do for now on.
