Hi,
Here is my rhubarb cake recipe... I have added Raspberries before so you can add some strawberries in the mix with the rhubard.
1/2 cup shortening or hard margarine (not the soft stuff)
1 cup brown sugar
1/2 cup white sugar
1 tsp vanilla
1 egg
1 cup sour milk (must be SOUR -to sour milk put in measureing cup; add a teaspon of vinegar and let sit for a while until it sours)
2 cups flour
1 tsp baking soda
1 tsp salt
1 1/2 cups of fresh rhubard (chopped into small cubes/pieces, can use pre-frozen rhubard but thaw and drain before measuring)
Topping:
1/2 cup white sugar
1 tbsp cinnamon
-Sift flour, baking soda and salt
-Mix all other ingredients, add in flour mix and blend
-add to greased 9x13 pan
-mix topping ingredients and sprinkle over top before baking
-bake at 350 for about 40 minutes
