I'm wondering what is the best way to store marshmallow fondant and how long you can store it for.  I made a batch a couple of weeks ago and stored it in an airtight container in the refrigerator.  Not sure if this was the right thing to do and how long I can keep it for.

Double wrap in plastic and a zip lock bag, removing all the air.  I put mine in dry storage.  I find that if you keep the fondant too long, more than a month maybe, white fondant will start to turn yellowish, just like marshmallows do.  Colored fondant will look better longer.  If the fondant gets too hard, you can carefully microwave it, wrapped in plastic for just a few seconds.  My husband discovered that reconstituting the dry fondant with a drop or 2 of water instead of shortening actually worked better.  I love MM fondant and will never buy premade.  It's unrealistically expensive.  Homemade can be flavored easily, even plain it tastes better than store bought. 
I do not store mine in the refrigerator I was told to wrap it good in saran wrap and place in a airtight plastic bag or container and keep in the cabinet and it would keep at least two months  and mine does very well and taste just as good requires some kneading when you open it up buts thats about it and you can put it back in the micrawave for about 10 -15 seconda and warm it up to work with it better and it does very well don't stick it there for long periods of time or it will burn it and be no good.  That is my suggestions maybe someone else has something better but it works for me Hope this helps

You can also store it in the freezer for longer periods.
I store mine wrapped up in the refrigerator or freezer and it's been fine. ( I throw it in the fridge if I know I'll use it in a month or so, if not, the freezer)
