How do I get smooth buttercream.  I use the paper towel trick but i think my icing consistency is wrong. I have what looks like tiny air holes in it. Am I overbeating it or is it my recipe??

Dianne, I'm not an expert on buttercream, but it sounds like you have too much air in it.  Try beating it at a lower speed in the first place.  If you have the problem once it's on the cake, try putting the cake in the freezer for a short while, so you buttercream is good and cold and firm.  Then try smoothing it out with a metal palette knife, dipped in hot water.

Katy is right,  if you beat your icing at too high a speed,  you incorporate air. I never go above #3 speed on my KA  mixer.  Also Katy is right again,  pop into fridge until very cold, or freezer. Use either hot spatula,  or let cake thaw slightly & use the paper towel trick again.

Please check tnis website: www.thatreallyfrostsme.com and check how you will have a smooth buttercream using the towel or google search smoothing buttercream with Viva. I haven't tried it yet but maybe it works.

The Viva paper towel does work. I can't get them here in Canada. My son went across to the USA for a shopping trip one wknd, so I had him stop at a large grocery store, Tops, In Niagara Falls, USA. I had him buy me a case of Viva paper towels.
