Hi Everyone.. I really need some help PLEASE! I am doing a wedding cake this weekend and the bride has just asked if they can change the bottom tier of cake to include strawberries. She wants actually strawberries and not a fruit filling. I make a strawberry shortcake cake, but have never done it as a wedding cake. Here's my problem, how do I make the whipped filling and add the berries on top without them "bleeding" and making it unstable/runny, as this is the bottom tier and needs to be hold the rest of cake. Any help you can offer is greatly appreciated!!! THANKS SO MUCH!! Sandee

Just my opinion Sandra, but I would say you probably can't! There is no way this is going to be strong enough to hold anything else on top.
Having said that, one thing comes to mind, but I'm still not sure it will work. What about not torting the cake, but rather hollow it out, leaving quite a thickish wall of cake, then filling it with your strawberries and cream, then putting a 'lid' of cake on that?
Oh my goodness....I wouldn't want to do this either! It's going to weep.....I've been there!! Not pretty...not pretty at all.....
Since no one will see the strawberries until they get their piece of cake, why not just serve it like strawberry shortcake and have the strawberries added to the plates in the kitchen--wedding cakes are usually cut and served from the kitchen anyway. This way, no weeping of either you or the cake!
