Cake Decorating Community - Cakes We Bake

Good afternoon everyone,  I want to put freshly sliced strawberries on a cake and am trying to find out if there is a way to put them on without them weeping.  I am also putting fresh blueberries and sliced kiwi.  I haven't had problems with the blueberries but haven't put kiwi on  a cake yet.  Also I am using a cream cheese frosting.  Any ideas or suggestions would be greatly appreciated.

I think you need to dry the fresh fruits with paper towel first then maybe make a bowl or basket from fondant with foil underneath then just cover it with some decorations. 

As Maria says, you would definitely need to dry the fruits out first.  They would also have to go on to the cake at the very last minute.  Or you could try dipping the part of the fruit that will sit on the cake in chocolate (white or dark, depending on the colour of your cake and your preference).

How about covering them with glacee--I used to make strawberries by dipping them in hard-crack sugar to make a glass-like shield.  It would easily work for kiwi, too, and probably blueberries, but would be a little tedious if you have a lot of fruit to do.  I don;t know how long they would last, especially if you have to refrigerate the cake--hard sugar seems to melt in the refrigerator for me after a few hours.
