PREHEAT oven to 350
MAKES 12 JUMBO OR ABOUT 1 AND 1/2 DONZEN REGULAR CUPCAKES
1 1/4 C all purpose flour
1/2 Cpistachios (finely chopped)
1 TSP baking powder
1/4 TSP salt
1 C sugar (not powder sugar)
1/2 C unsalted butter @ room temp
3 egg
1/2 TSP almond extract
3/4 C of milk
1. in samll bowl mix flour, pistachios, baking powder and salt.
2. W/mixer beat togehter sugar and butter until well combined. Add eggs one at a time (each egg should be mixed in thouroughly). Add almond extract. Alternately mix in flour and milk.
****make 3 additions of flour and 2 of milk****
pour batter into liners, cook for about 20 to 25 min. they should be golden brown and when you touch the middle should spring back... Then they are ready.
