hi everyone I have just joined the this site and have a question if someone could help me I have been making wedding cakes now for about a year and my last cake was told delicious moist but when they cut it fell apart don't know why help

Hi Jane and welcome. I guess you mean the sponge cake fell apart? Strange if it was moist and yet it did that.....
Just a couple of thoughts -
Was it a light sponge - if so, perhaps the fondant was too heavy for it.
Was the cake served chilled? Filling may then have been too firm for the sponge.

I AGREE WITH KATY ! also , what kind of knife did they cute it with , that also makes a big diffrance i found !

i know i have seen some cute cakes , and made a big mess with a dull or butter knife lol , but when i bring my good knifes , its all good , i kinda think that may be the thing to point out to who ever cuts the cake ,
