Well, I froze the cakes earlier in the week, then I put buttercream on them and then the fondant....should I put the buttercream on and let them warm up before I put the fondant on??
Terra, cakes should be iced and covered with fondant at room temp..if the cake was frozen when you covered with fondant that was the cause of the sweating. What icing are you using?

Buttercream. How do you frost it at room temp??? They just fall apart!

What I do in my case is a dont freeze my cakes I refrigerate. And do the crumbcoat cold. Then put the cake back in the
fridge and let it settle down and get cold so I can give it a second coat. After that I don't put it back in the fridge.
