I have some family members that are diabetic. We are having a birthday party for my husband and I was wanting to make it so that everyone could enjoy the cake. Any suggestions or recipies that would be good?

I'm in the same situation. My husband is diabetic also. I haven't found a good recipe yet but I can tell you what NOT to try. There's one out there where you put powdered milk and Splenda in the blender to make a substitute PS. It was the worse thing I have ever tasted in the sugar-free realm. My husband, who will eat anything, did like it either.

I use Agave Nectar (here's one source: www.OrganicSyrups.biz) I get it at Whole Foods but is getting readily available at a lot of supermarkets. It is a low glycemic index food ideal for diabetics made from the agave plant ( yes...tequila plant) I also use it in Margaritas because sugar is a killer. Hope this helps.
I use sugar alcohols from Emerald Forest http://www.emeraldforestxylitol.com/ They have very low glycemic indexes. My Favorite is Xylitol...I think it taste just like sugar. Cream 2-8OZ packages of cream cheese...yes the full fat kind...non fat has loads of carbs...with 1 cup of Xylitol until light and fluffy and the xylitol is dissolved. It will take about 6-7 minutes. Add a few tbsp of milk to thin to the desired consistency. Add 1 tbsp vanilla or flavoring desired. You can bake with xylitol too. There are recipes on that site as well.
