How far in advance can I make fondant decorations?

Hi everyone,

 

I will be making fondant pearls, cut out shapes and stripes to go on the fondant cake this weekend.

 

How far in advance can I make all this?  I was hoping to start today, but will it become hard and dry by the time Saturday rolls around?

 

And what is the best way to store these once I've completed them?

This is just my own method, I'm sure there are others.

If I have fondant and/or gumpaste decorations that need to harden (flowers, flat decor, etc.), I make them up at least 2 days in advance, but sometimes as much as a week in advance and store them in a cool, DARK place (the colors tend to fade in light). I usually make a few extra, too, in case of breakage.

If you don't want them to harden (stripes or bands that will go around a round cake), I wouldn't do them until the day of. You can always color it ahead of time and keep it wrapped tight and out of the light. I keep mine in the fridge until I need it and take it out at least 2 hours before using so it's more pliable. I have made cut out shapes and kept them in the fridge and they do stay more pliable because they are in an air-tight container and no open to the air. But I wouldn't count on that.
i do all my decoration a week in advance if i could , to keep them soft i put them in a tight air container in the fridge , to get them hard i dry them for 2 days then store them in a cool dark place.

So i'm going to start making my fondant shapes today and keep it in an air tight container & in the fridge.
Your decorations will be sticky when you go to use them if you put them in the fridge! If you don't mind them hard just store them in the open air. If you want them soft... make them the day of. I really hate to see you pull them out of the fridge to use them and find them sticky!
Jeri...i'm doing a pearl border around a 2 tier cake...i can't possibly make all those balls the day off...so i wanted to do them in advance.

Also because this is my first fondant cake i dont want to rely on getting things done on the day ...what if i royally mess up...!! So i wanted to be prepared before hand.
Jeri is right Meera - if you put them in the fridge they will be sticky because the fondant is basically staying the same as when you made it. The fondant pearls are better left in the air to dry. When I did the wedding cake back in March I did up my pearls several days in advance and put them on a cookie sheet to dry in a cupboard. Make sure they are not touching until they are dry and then you can put them into a container once they are hard. I say hard, but they don't get rock hard like if you made them with gumpaste - they are still easy to eat. Hope this helps!

Oh I see now..when i read hard, i thought it becomes candy rock hard!!! :) Awesome I will do what you suggested Eileen and Jeri. Thanks ladies!! You are saviours!! I'm going to start today so if i have any problems you will know! heheh...
