hi my name is daina i am new to making and decorating cakes and cupakes i have been trying to make fondant but it ist turing out it is either to greasy or to dry or to soft does any body have some ideas for me i have about amouth to figuer this out so i can make my cake for my mom and sister law birthday

The amount of powdered sugar you add depends on the humidity the day you make it. Start with 3/4 of the total amount of sugar then take the fondant out of the mixer and knead in enough to make a firm fondant. You may need to add more than the amount called for or less...you will have to go by feel....firm, not sticky but smooth....hope that helps! And let it sit wrapped in plastic on the counter overnight to cure. It will be more smooth and easier to work with. Dont refrigerate it.
so i am at it again to make a cupcake for my nices birthday witch is tomrow andi tryed to ice my cupcakes but the icing just kind of melted every where what can i do

Hello! Sorry to hear that you are having difficulties. I don't know what recipe you use, but I stick to the Wilton recipe for my Buttercream, for the most part:

1 cup solid white vegetable shortening
1 teaspoon Wilton flavor (Vanilla, Almond or Butter)..... I use pretty much any kind of clear flavor extract
2 tablespoons milk or water
1lb pure cane cofectioners sugar (apprx 4 cups).... I prefer using Domino powdered sugar
1 tablespoon Wilton Meringue Powder (this is just powdered egg whites)
a pinch of salt (optional)

If you want to make chocolate buttercream, just add 3/4 cup cocoa powder or 1 oz semi-sweet/unsweet chocolate squares (melted) plus 1-2 tablespoons of water

AS FOR FONDANT recipe:

Marshmallow fondant is pretty tasty, but also quite sweet.

Bag of mini marshmallows
2 tablespoons of water

heat in the microwave 30 seconds at a time, take out and stir and repeat this cycle about 3 times until marshmallows are soft/fluffy.

Make sure you grease your countertop and hands really good with Crisco and pour melted Marshmallows on top of powdered sugar. Knead until it has a "play dough" type consistency.

Daina - I put a video tutorial on here showing how to make basic Marshmallow fondant. I, too, had tried several different recipes with no success. This stuff works GREAT. If you look at my photo album, all the fondant work in there is done with this MMF recipe. Hope it helps!!
