Is it okay to freeze fondant figures? I need a lot for a cake in 2 weeks and don't want to be doing them all at the last minute. I'd let the figures airdry, but the kids like to eat them, and I'm afraid they'll be too hard by then.

I've put fondant-covered cakes in the freezer, with mixed results. The cakes seem to go through a gooey phase, but eventually dry out, but I'm never sure if that's due to moisture being released by the cake defrosting or the high humidity in New Hampshire in the summer months (which is when I seem to get the most cake orders).

I have refrigerated fondant cutouts in the fridge with good results. I Just seal them in a ziplock bag. They were made out of marshmallow fondant and they softened as they warmed up. Try a few and see what happens.
