Cake Decorating Community - Cakes We Bake

I am going to be making ten 8 inch cakes for my Daughters wedding shower. One for each table. In August... How long can I make the cakes in advance? I am going to try to make flowers from Fondant and Molding chocolate.. How far in advance can I do these? Can I order them already made and where? Thank you for all your advice....Patty

I would make the cakes, wrap them up good in plastic wrap and then in foil and freeze them. Then thaw them in the fridge the night before you want to decorate then. If you put your flowers in an airtight container, once they are dry, they will keep for several weeks. I would use a combination of fondant and gum paste for your flowers. If you store any chocolate decorations you make in a cool place, they can be made way ahead of time.
P.S. By a cool place, I don't mean the refrigerator. Chocolate will develop condensation on it and then when the condensation goes away, so does the shiny finish.

How long will the cakes keep for in the freezer using this technique? 

 I am atteempting to make my own wedding cake and then a week later a gender reveal cake for my oldest daughter's best friend.

And.... it's Girl Scout cookie season. My youngest has a goal of selling 1600 boxes this year, so it will be every spare second of every day selling cookies.

I need to make as much up front as possible for both of these.

The longest I've ever kept a cake frozen, well wrapped with a double layer of plastic wrap, then a layer of aluminum foil, was one year - wedding cake eaten on 1st anniversary.  It was still as tasty and fresh as the day of the wedding.  If you are using buttercream for filling, you can fill and crumb coat prior to freezing.  I've even frozen the cakes completely frosted in buttercream and they worked fine.  I have no experience freezing fondant.

You can make your gum paste or chocolate flowers months in advance.  Just keep them in a cool room, lightly covered to keep free of dust and away from strong light to prevent fading.  Gum paste should not be sealed in air tight plastic boxes or bags.

There are many online sites who provide various type of cakes. I am sure they can provide a solution for this. If you want to make the cake yourself than freezing will depend on what type of cake you decide to make.
