I'm just going into cupcakes and i have a question. After baking my cc then i leave to cool, the wrapper(cc case) starts coming off. Why is this? Pls help.
I think it has to do with different types of cupcake wrappers. I used to have the problem when I'd use the ones from the grocery store. I started buying either the Ateco ones or the Wilton ones and have not had the problem any more. The wrappers from fancy flours are awesome but very expensive they bake up so nice that you don't have the cake showing through the wrapper either.
I've had a lot more luck since I started using Reynolds brand cupcake wrappers, not only do they not peel but they fit much better into the tins. With some of the other brands it was like a guessing game to see how many would fit properly in tins...
I've had that happen with a couple different recipes so my only conclusion is that maybe there's too much fat in the recipe. One recipe used a lot of butter in it and the other used mayonnaise and they both came off when cooling. When this happens (as much as it irks me to waste cupcake liners) I take them out of the wrappers that are coming off and drop them into another decorative wrapper.
I had this happen also when I made banana cupcakes that had a lot of butter in it. Made chocolate and white cupcakes at the same time and wrappers stayed on great so it must be the butter or oil that made this happen.
Glad I'm not the only one with this problem. My old job required I make mini's by the thousand's. Things worked fine for years and suddenly started having issues ( very Frustrating). I tried every differnt kind of mini liner known to man kind - Nothing worked. I did finally start using a different recipe that had lots of oil in it and that resolved the problem but only for white cake. Unfortunately I no longer worked there but at least I was able to figure out part of the problem.
