Anyone have a good recipe for a super moist carrot cake?  My son is asking for a carrot cake for his birthday.  If anyone has had the carrot cake from Blue Moon BBQ this is what I'm aiming for.

Well I'm in FL & never had the pleasure of eating at the Blue Moon BBQ, but I do have a recipe that we love & you are welcome to it. I have to leave (meeting at the school, UGH!!!!) & will check back with you when I return, if you haven't got what you are looking for & want mine I'll send it to you. :)

Carrot Cake

Cake

2 cups all-purpose flour
2 cups sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
4 eggs
1 ¼ cups oil
2-3 cups finely grated carrots

Sift together first 5 ingredients, set aside.

In a large bowl combine eggs, oil & carrots, mix well.

Add dry ingredients to the wet, beat well.

Pour into 2 grease & floured pans. (I just use non-stick cooking spray). Bake at 350 for 45 minutes or until cake test done. Cool in pan for 10 minutes. Remove to wire rack & cool completely.

(side note- I don’t like raisins so when I copied this from my friend I didn’t even write them on the recipe. If you do like, just add a ½ cups. Also I have another recipe that calls for 8oz drained pineapple & ½ cup coconut).

Frosting/Icing

1 - 8 ounce package of cream cheese, softened
1 stick butter (1/2 cup) softened
1 - 1 pound bag powdered sugar
1 cup chopped pecans

In a mixing bowl, beat cream cheese & butter until light. Gradually add in powdered sugar beating constantly until smooth. Stir in pecans.

Sissy it was soooo funny, I was typing this up & thinking how silly it was to tell you how to make frosting, step by step. LOL. The only reason I wrote out ALL the words was in case someone that wasn't familiar with US measurements & abbreviation could better understand it.

My daughter wants a carrot cake for her birthday also. I was told....'Mama I want a carrot cake for my birthday, but not for my birthday party.' She's afraid some of her friends wouldn't like it........I told her we'd worry about that come October....LOL!!!
Some days it's good to have things spelled out step by step. LOL

My granddaughter has a birthday in October. Not sure what she's going to come up with. My other granddaughter's birthday is in August. I was hoping to make the giraffe cake for her but right now she says she wants a Barbie Diamond Castle cake. Seems I remember seeing a photo of a castle cake in your library. Got any pointers for me?

Tomorrow is my grandson's and son's birthday. I'll be making the alligator cake for my grandson and my son wants the carrot cake. Sure wish I could run to Tuscaloosa and just buy one and add some decorations to it. Problem is Tuscaloosa is two hours away.

Castle cake--I used the Wilton Romantic Castle. That was when she was going to be 8, so I had her & my older son helping cut out & press into a foam former (or whatever it's called) all the flowers. I did do a few things different than the instuctions. Look me up if it's what she decides she wants. I will tell you..WATCH OUT FOR THE CANDLES! I let my sister put the candles on the cake NOT THINKING about the plastic. Needless to say, I can't use that set for anyone else (outside the family) there are black charred spots on the plastic :( .
I agree, baking would be the sensible choice for sure.

What you can do with the blackened turrets is cover them with matching fondant Tara. The reason I thought of this is because I just did the Medieval Cake a few weeks ago and all nine turrets had to be covered with fondant. At least your kit would still be usable. Just and idea.

Here's the recipe I use--

Carrot Cake or Banana Cake
Serves/Yields: Approx. 8 cups
Cook Time: 1 hour

I found several recipes and took a little of each until I found a recipe that gets great reviews. I use the same base recipe for both carrot and banana cake. One mix makes one 9x13, two 8" rounds or one 12" round - all 2" high. Two mixes needed for 11x15.

Wet Ingredients:

For Banana Cake - 3-4 bananas
For Carrot Cake - 3 cups of shredded carrots
4 eggs
1 1/2 cups granulated sugar
1/2 cup brown sugar (light or dark)
1/2 cup orange juice
1 cup sour cream
1 1/2 cups vegetable oil
1 tsp. vanilla

Dry Ingredients:

3 1/2 cups all purpose flour
1 tsp. cinnamon
1/2 tsp. nutmeg
2 tsp. baking soda
1 tsp. baking powder

Optional for Banana Cake: 1 cup chopped walnuts, 1 cup mini chocolate chips
Optional for Carrot Cake: 1 cup raisins, 1 cup coconut, 1 cup chopped walnuts, 1/2 cup crushed drained pineapple
Preheat oven at 300 degrees.
Prepare pans for baking (grease-flour, baking spray, etc.)

BANANA CAKE
First beat bananas in mixer
Add wet ingredients mix well, and then add dry ingredients mix well. Add any other optional ingredients and mix gently.
Pour into prepared pans and bake until knife comes out of center of cake clean.

CARROT CAKE
Add wet ingredients mix well, add dry ingredients mix well. Then add 3 cups of shredded carrots and mix well. Add any other optional ingredients and mix gently.
Pour into prepared pans and bake until knife comes out of center of cake clean.

Those recipes sound YUMMY!!! I've been wanting to bake a hummingbird cake (very close to a banana cake), so now I can't decide which one to bake...that or carrot. I may try your recipe for a change in my carrot cake too.....I'm saving them right this minute!!!!
