Cake Decorating Community - Cakes We Bake

Total rookie question here -

 

For a 3-tier wedding cake, 14", 10" and 6", do you bake 2 layers of each cake and stack them?  Or do you torte each layer and then fill it?  I would think torting would make a pretty flat cake, but I think stacking would make a HUGE cake.

I'm assuming you are using 2" pans and not 3". IMHO, with 2" layers I would use 2 layers for each tier so that your tier is about 4" high. If you are using 3" pans you might want to torte 1 layer twice so you end up at the same 4" range.

I torte and fill 2, 2 inch layers for each tier so that there's 4 layers of cake and 3 layers of filling. Approximately 4"(+) tall.

If using 3" layers, I would torte twice each layer for a shorter tier or bake two, torte both and use one of the torted layers from the second one to bring the first one up to my normal height and save the 2 unused layers for something else...cake balls...a half cake(cut those two in half to make a 4 layer half round)...I dunno...something.

Or, if using 3" layers and want a tall tier, I would split each twice and treat each like a separate tier by doweling and adding a cake circle between then icing them as one tier.
I actually think once I've tried leveling the layers and finally gotten them right, 2 baked layers will make a decent sized tier. LOL. Thanks for the input.
I bake my cakes 2 layers in 2" pans and torte them with a serrated knife, fill with filling (Not too much, or it will bulge out the sides even with a dam.) Depending on the cake batter and recipe sometimes I bake a third 2" layer and torte and fill as well to achieve the look I want. It makes a pretty cake to cut into seeing all the layers of cake with the filling, and you have room in there if you want to alternate your filling choices for example:cake, truffle filling, cake, coffee buttercream, cake, you get the point. Yumm, people love that option if you give it to them! hahaha Hope this helps! Geisel
I will torte if they want it torted but... I have found that most are just fine with a layer of filling between the 2" layers. for a 4" tall cake. And... most everyone I bake for does not like the extra sweet that the filling adds and one layer of filling is perfect for them... and it is a ton less work too! :-)
Thanks, Jeri! I was actually going to just do one layer of filling (especially for the bottom layer with is a really rich cake - I don't think they want extra sweetness in that one) for each tier. Plus, this is my first wedding cake so I'm trying to keep it as simple as possible!!
