Hi margo, i have a fan oven which caused no end of baking trouble. I now have to make the temp much lower and cook for way longer a 8inch madiera takes about2 hours to cook on 120 degreeslower
I bake my cakes in a normal oven, never had a problem. Wish I could help.........nyway good luck to u

I bake in 2-fan oven and have had no problems so far.
If yours is a combination oven; that is one that can aslo microwave; you need to make sure that you are baking with the convection oven mode (the one with the fan); it is usually the symbol with a line at the top and one at the bottom.
Also use an oven thermometer, sometimes with the fan , the temp in the oven is not what is reflected on the dial. Set the oven at the temp you require; then put in a oven thermometer on the middle rack of the oven and check and see if the temp on the thermometer is the same as the one on the dial. You then make the necessary adjustments.
As for my oven, coz I do bake a lot.; it has become rather hot; thus when recipes calls for 180C, I would be baking at 150 to 160C and my cakes turn out fine.
You really need to make friends with your oven; really even ovens with the same brand sometimes work differently. I have a friend who has had to bake her cakes at 130C on the dial since her cakes come out burnt even at 150C on the dial.
The problem may not be the fan; it could be also the heating element... so try my suggestion and see what happens. Honestly, Ive been using ovens with fan for more than a decade now.... no problems so far.
