My eldest daughter doesn't like cake,but likes cheesecake. I would like to make her some kind of tier cheesecake for her sweet 16 party. Does anyone have any ideas or suggestions for this?

As someone who bakes a lot of cheesecakes, I can tell you you don't want to stack them directly on top of one another. If you can, use dowels and dividers and give the bottom cake at least a 1/2" clearance in between so your bottom cheesecake can "breathe" or it will get soggy. You can hide the gap with piped or fondant accents.

Another nice way I've seen people do cheesecakes rather than traditional cakes is to get a "spiral" display. (If this is for a fancy, formal party you can sometimes rent these at a rental place).
