Cake Decorating Community - Cakes We Bake

I have two cakes in the freezer for a cake to be delivered tomorrow. I wanted to get as much work done today as possible. If I take the cakes out of the freezer today and let them get to room temperature, then crumb coat them and cover with fondant will the cake still be good tomorrow? I also need to sculpture part of the cake before crumb coating it, don't know if that makes a difference or not.

I also have to cover rice crispies with modeling chocolate and was wondering if I did that today, will it be ok for tomorrow or will it dry out.

Trying to not leave everything until tomorrow.

Terry, are you asking about the fondant or the cake itself?  If your cake recipe is good it should still be good a week after you bake it (or take it out of the freezer).  That gives you a couple of days to work with it and a few days for the eating.  Fondant will be fine for a few days.  It just naturally dries out and this happens quickly so there's not much you can do about it.  If you finish the cake tonight it will certainly be fine tomorrow.

Thanks for your reply. Yes, I was asking about the fondant on the cake. I was also asking if modeling chocolate would dry out overnight? I hate to have it cracked when I give the cake to the person.

Your cake will be fine!  You have a lot to do so I would definitely get going today :)  I've covered a lot of cakes with fondant and they can last for a few days before drying out too much.   As for the modeling chocolate, as long as you keep them in airtight containers they can last for months. 

Get to crack-a-lacking girl! It will be fine! You have a lot of work to do. You could have started yesterday. lol
